Baked Frittata with Arugula, Portobello & Feta

Baked Frittata Recipe

Ingredients:

  • 8 eggs, beaten
  • 1/2 cup milk
  • 1 cup chopped arugula
  • 1 cup sliced portobello mushrooms
  • 1/2 cup crumbled feta cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. Heat the olive oil in a nonstick skillet over medium heat. Add the sliced mushrooms and sauté for a few minutes until tender.
  3. Add the arugula to the skillet and gently sauté until wilted.
  4. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  5. Add the cooked mushroom and arugula mixture to the bowl and stir well.
  6. Gently fold in the crumbled feta cheese.
  7. Pour the egg mixture back into the skillet. Cook on the stove for 3-4 minutes or until the edges start to pull away from the skillet.
  8. Transfer the skillet to the preheated oven and bake for 10-15 minutes (or until the center is firm).
  9. Remove the skillet from the oven and let it cool down for a few minutes before slicing and serving.
