- 6 large eggs
- 1/4 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 red onion, chopped
- 1 red bell pepper, chopped
- 1 cup spinach, chopped
- 1/2 cup shredded cheddar cheese
Instructions:
- Preheat the oven to 350°F.
- In a large bowl, whisk together eggs, heavy cream, salt, and black pepper.
- Heat olive oil in a large oven-safe skillet over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.
- Add spinach to the skillet and cook until wilted, 1-2 minutes.
- Pour egg mixture over the top of the vegetables in the skillet and sprinkle with shredded cheese.
- Transfer skillet to the oven and bake for 12-15 minutes, until the frittata is set and the cheese is melted and bubbly.

- 1 red pepper, chopped
- 50g chorizo, sliced
- 1 onion, sliced
- 1 small courgette, sliced

- 100ml milk
- 50g cheddar, grated
