- 6 slices of thick bacon
- 4 slices of bread
- 2-3 tablespoons of soft unsalted butter
- 4 slices of cheddar cheese
- 2 slices of Swiss cheese
- 1 tablespoon of mayonnaise
- 1 tablespoon of Dijon mustard
Instructions
- Cook bacon on medium heat until crispy, then remove and set aside on paper towels to drain excess oil.
- In a small bowl, mix together mayonnaise and Dijon mustard.
- Butter one side of each bread slice and spread the mayonnaise mixture on the other side.
- Layer Swiss cheese followed by cheddar cheese on the mayonnaise side of two bread slices.
- Place two strips of bacon on each cheese stack, then top each with the remaining bread slices, butter side up.
- Heat a griddle or frying pan on medium heat, cook sandwiches for about 3-4 minutes on each side until cheese is melted and bread is crispy golden brown.
