Hey y’all! If you’re like me, then you love trying out new recipes and creating delicious dishes for your loved ones to enjoy. Today, I have a recipe that I’m sure you’ll love: Quinoa Guacamole Salad!
To get started, you’ll need the following ingredients:
– 1 cup quinoa, rinsed
– 2 cups water
– 1 can (15 oz) black beans, drained and rinsed
– 1 red bell pepper, diced
– 1 yellow bell pepper, diced
– 1/2 red onion, diced
– 1/2 cup chopped cilantro
– 2 ripe avocados, diced
– Juice of 2 limes
– Salt and pepper, to taste
Instructions:
1. In a medium pot, bring the quinoa and water to a boil. Reduce heat to low and simmer for 15-20 minutes, or until the quinoa is cooked and the water has been absorbed.
2. In a large bowl, combine the cooked quinoa, black beans, bell peppers, red onion, and cilantro.
3. In a small bowl, mash the avocado with a fork and mix in the lime juice. Add the avocado mixture to the quinoa mixture and stir until well combined. Season with salt and pepper, to taste.
4. Serve chilled and enjoy!
