When it comes to Mexican cuisine, there are few chefs as renowned as Rick Bayless. His restaurants, including Frontera Grill, have become go-to destinations for food lovers seeking the bold flavors and fresh ingredients that define true Mexican cooking.
One dish that is always a hit with my family and friends is guacamole. While there are countless variations on this classic recipe, I recently came across a basic recipe that I just had to try. And let me tell you, it did not disappoint!
To start, you’ll need a few simple ingredients: ripe avocados, lime juice, salt, and a bit of fresh cilantro. From there, you can customize your guacamole with any additional flavors or spices that you like. Personally, I love adding a bit of minced garlic and diced tomatoes for a little extra kick.
To make your guacamole, simply scoop out the flesh of your ripe avocados and mix them together with lime juice and salt. Mash everything together with a fork or a potato masher until it reaches your desired consistency (personally, I like mine a bit chunky). Add any additional ingredients and adjust the seasoning to taste.
Now, no discussion of guacamole would be complete without talking about the perfect vehicle for enjoying this delicious dip – chips! I love serving my guacamole with a mix of homemade and store-bought tortilla chips. If you’re feeling ambitious, you could even try making your own chips from scratch using masa harina and a tortilla press.

If you’re lucky enough to be in the Chicago area, I highly recommend making a reservation at this iconic restaurant. From the fresh, locally sourced ingredients to the expertly crafted cocktails, every aspect of the dining experience at Frontera Grill is top-notch.
In fact, one of my favorite dishes from Frontera Grill is their Local Organic Salad. This delicious salad is loaded with fresh greens, heirloom tomatoes, roasted sweet potatoes, and a zesty dressing made with fresh lime juice and spices. It’s the perfect way to start a meal and sets the tone for the bold, flavorful dishes that follow.
So whether you’re whipping up a batch of basic guacamole at home or heading out to Frontera Grill for a night out, there’s no denying that Mexican cuisine is always a hit. The freshness, boldness, and delicious flavors of this cuisine make it one of my all-time favorites, and I hope you’ll give it a try too!
