- Transfer the mixture to a 9×13 inch baking dish and cover with foil.
- Bake for 30-40 minutes or until the rice is cooked.
- Sprinkle with the shredded Cheddar cheese and bake for another 5-10 minutes or until the cheese is melted and bubbly.
Healthy Recipes for Picky Eaters
This next recipe is for all my people out there who are trying to eat healthy but struggle with picky eaters. These recipes are delicious and healthy, so you can have your cake and eat it too.
Ingredients:
- 1 avocado, halved, pitted, and peeled
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 deli turkey slices
- 4 thin slices cheddar cheese
- 4 lettuce leaves
- 4 slices tomato
Instructions:
- Mash the avocado with a fork in a bowl until smooth.
- Stir in the lime juice, salt, and black pepper.
- On a cutting board, place one slice of turkey and one slice of cheese on top of it. Layer one lettuce leaf and one slice of tomato on top of the cheese.
- Add a tablespoon of the avocado mixture on top and roll everything up tightly, holding it together with a toothpick, if necessary.
- Repeat with the remaining ingredients.
- Enjoy your healthy and delicious turkey roll-ups!
