Ingredients:
- 8 bone-in, skin-on chicken thighs
- 1/4 cup olive oil
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 2 tbsp jerk seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cloves garlic, minced
- 1 lime, juiced and zested
Instructions:
- Preheat oven to 375 degrees F.
- In a bowl, combine the olive oil, soy sauce, brown sugar, jerk seasoning, salt, black pepper, garlic, and lime juice and zest. Mix well.
- Add the chicken thighs to the bowl and coat well with the marinade.
- Cover and marinate the chicken in the refrigerator for at least 30 minutes.
- Place the chicken in a baking dish and bake for 35-40 minutes, or until the internal temperature reaches 165 degrees F.
- Remove from the oven and let cool for a few minutes before serving.

- Cover and marinate the chicken in the refrigerator for at least 4 hours, or overnight.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard any excess marinade.
- Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165 degrees F.
- Remove from the grill and let cool for a few minutes before serving.
