Oh lawd, have mercy! Today I’m sharing with y’all one of my favorite recipes for Caribbean jerk chicken. This is some good eatin’ right here, let me tell you.
Grilled Jamaican Jerk Chicken
Ingredients:
- 3 lbs. chicken drumsticks
- 2 tbsp. soy sauce
- 2 tbsp. olive oil
- 1 tbsp. honey
- 2 tbsp. Jamaican jerk seasoning
- 1 lime, juiced
- 2 garlic cloves, minced
- Salt and pepper, to taste
Instructions:
- In a small bowl, combine the soy sauce, olive oil, honey, Jamaican jerk seasoning, lime juice, garlic, salt, and pepper.
- Add the chicken to the bowl and toss to coat.
- Cover and refrigerate for at least 1 hour.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the remaining marinade.
- Grill the chicken for 20-25 minutes, turning occasionally, until cooked through and the juices run clear.
- Remove the chicken from the grill and let it rest for a few minutes before serving.
Caribbean Jerk Chicken
Ingredients:
- 4 bone-in chicken breasts
- 1/2 cup soy sauce
- 1/2 cup lime juice
- 1/4 cup olive oil
- 3 tbsp. brown sugar
- 1 tbsp. garlic powder
- 1 tbsp. ground allspice
- 1 tbsp. dried thyme leaves
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/2 tsp. cayenne pepper
- Salt and pepper, to taste
Instructions:
- In a large bowl, whisk together the soy sauce, lime juice, olive oil, brown sugar, garlic powder, allspice, thyme, cinnamon, nutmeg, cayenne pepper, salt, and pepper.
- Add the chicken to the bowl and turn to coat. Cover and refrigerate for at least 1 hour.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the remaining marinade.
- Grill the chicken for 6-8 minutes per side, until cooked through and the juices run clear.
- Remove the chicken from the grill and let it rest for a few minutes before serving.
