Jerk Chicken Recipe Cook Like A Jamaican

One-Pan Jamaican Jerk Chicken & “Rice”

Here’s what you’ll need:

• 2 boneless, skinless chicken breasts
• 1 cup of cauliflower rice
• 1 teaspoon of ground allspice
• 1 teaspoon of dried thyme
• 1/2 teaspoon of garlic powder
• 1/2 teaspoon of onion powder
• 1/4 teaspoon of cayenne pepper (or more, if you like it extra spicy)
• 1 teaspoon of salt
• 2 tablespoons of olive oil
• 1/2 cup of water
• Fresh cilantro leaves (optional)

Directions:

1. Preheat your oven to 400 degrees F.
2. Season the chicken breasts with allspice, thyme, garlic powder, onion powder, cayenne pepper, and salt on both sides.
3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
4. Add the chicken to the skillet and cook until browned on both sides, about 4 minutes per side.
5. Add the cauliflower rice to the skillet and stir to combine with the chicken.
6. Add water to the skillet and stir to combine everything together.
7. Transfer the skillet to the oven and bake for 20-25 minutes, until the chicken is cooked through and the cauliflower rice is tender.
8. Serve hot, garnished with cilantro leaves if desired.

4. Remove the chicken from the marinade and discard the leftover marinade.
5. Grill or broil the chicken for about 6 minutes per side, until cooked through.
