How to Make Kimchi
First, you will need to gather all of your ingredients. Here’s a list of what you’ll need:
- 1 head of Napa cabbage, cored and cut into bite-sized pieces
- 1/4 cup of sea salt
- 8 oz of daikon radish, cut into matchsticks
- 4 green onions, thinly sliced
- 1/4 cup of gochugaru (Korean chili flakes)
- 2 tablespoons of fish sauce
- 1 tablespoon of grated ginger
- 1 tablespoon of minced garlic
- 1 tablespoon of sugar
- 1/4 cup of water
To start, place the cabbage and salt in a large bowl and let it sit for 1-2 hours to sweat. Once the cabbage has wilted, rinse it thoroughly with cold water and drain it well.
Next, in a separate bowl, mix together the gochugaru, fish sauce, ginger, garlic, sugar, and water to create a paste. Add the daikon radish and green onions to the paste and mix until everything is evenly coated.
Now it’s time to combine everything. Add the cabbage to the bowl with the paste and use your hands to mix everything together, making sure that all of the cabbage is coated in the paste.
Transfer the kimchi to a clean, airtight jar and let it ferment at room temperature for 1-5 days, depending on how tangy you like it. Once it’s ready, store it in the fridge and enjoy it within a month.
