Have you ever tried Chijimi? It’s a delicious Korean pancake made with flour, water, and various ingredients like scallions, seafood, or vegetables. Today, I want to share with you my favorite recipe for Chijimi that I learned from my grandmother. It’s perfect for a quick lunch or as an appetizer for a dinner party.
Chijimi Recipe
Ingredients
- 1 cup all-purpose flour
- 1 cup water
- 1/4 cup kimchi, chopped
- 2 scallions, chopped
- 1/4 cup squid, sliced (optional)
- 1/4 cup shrimp, peeled and deveined (optional)
- 1/4 cup carrot, julienned
- 1/4 cup zucchini, julienned
- 1/4 cup onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
Instructions
- In a bowl, mix together flour and water until smooth.
- Add kimchi, scallions, squid, shrimp, carrot, zucchini, onion, and garlic to the batter and mix well.
- In a non-stick pan, heat the vegetable oil over medium heat.
- Pour half of the batter into the pan and spread evenly.
- Cook until the bottom is golden brown, about 3 minutes.
- Flip over and cook the other side until golden brown, about 3 minutes.
- Repeat with the remaining batter.
- In a small bowl, mix together soy sauce, vinegar, honey, and sesame oil.
- Serve the Chijimi hot with the dipping sauce on the side.

Kimchi-jjigae Recipe
Ingredients
- 2 cups kimchi
- 1/2 pound pork belly, sliced
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 cups water
- 2 tablespoons gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 block firm tofu, sliced
- 2 scallions, chopped
Instructions
- In a pot, fry the pork belly until golden brown and the fat has rendered.
- Add onion and garlic and sauté for a few minutes.
- Add kimchi and cook for 5 minutes.
- Add water, gochujang, soy sauce, and sesame oil and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Add tofu and scallions and cook for another 5 minutes.
- Serve hot with rice on the side.
