Kimchi Chijimi Recipe

Have you ever tried Chijimi? It’s a delicious Korean pancake made with flour, water, and various ingredients like scallions, seafood, or vegetables. Today, I want to share with you my favorite recipe for Chijimi that I learned from my grandmother. It’s perfect for a quick lunch or as an appetizer for a dinner party.

Chijimi Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1 cup water
  • 1/4 cup kimchi, chopped
  • 2 scallions, chopped
  • 1/4 cup squid, sliced (optional)
  • 1/4 cup shrimp, peeled and deveined (optional)
  • 1/4 cup carrot, julienned
  • 1/4 cup zucchini, julienned
  • 1/4 cup onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil

Instructions

  1. In a bowl, mix together flour and water until smooth.
  2. Add kimchi, scallions, squid, shrimp, carrot, zucchini, onion, and garlic to the batter and mix well.
  3. In a non-stick pan, heat the vegetable oil over medium heat.
  4. Pour half of the batter into the pan and spread evenly.
  5. Cook until the bottom is golden brown, about 3 minutes.
  6. Flip over and cook the other side until golden brown, about 3 minutes.
  7. Repeat with the remaining batter.
  8. In a small bowl, mix together soy sauce, vinegar, honey, and sesame oil.
  9. Serve the Chijimi hot with the dipping sauce on the side.

Kimchi-jjigae Recipe

Ingredients

  • 2 cups kimchi
  • 1/2 pound pork belly, sliced
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 cups water
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 block firm tofu, sliced
  • 2 scallions, chopped

Instructions

  1. In a pot, fry the pork belly until golden brown and the fat has rendered.
  2. Add onion and garlic and sauté for a few minutes.
  3. Add kimchi and cook for 5 minutes.
  4. Add water, gochujang, soy sauce, and sesame oil and bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Add tofu and scallions and cook for another 5 minutes.
  7. Serve hot with rice on the side.
