Kimchi Recipe Authentic Korean

Making your very own authentic Korean Kimchi might sound intimidating, but with just 8 simple steps, it’s easier than you think! This traditional dish is essential to Korean cuisine and is not only a delicious side dish, but also has wonderful health benefits.

– 1 head of Napa Cabbage
– 1/2 cup of Kosher Salt
– 6 cups of water
– 1 tablespoon of grated Ginger
– 1 tablespoon of minced Garlic
– 1 tablespoon of Sugar
– 1/4 cup of Fish Sauce
– 1/4 cup of Shrimp Sauce
– 1 cup of Korean Red Pepper Flakes (Gochugaru)
– 1 bunch of Scallions, chopped
– 1/2 cup of Julienne Carrots

Now, let’s get started:

1. Cut the cabbage into quarters lengthwise and remove the core. Then, cut into bite-sized pieces.
2. In a large bowl, dissolve the salt in water. Add the cabbage and make sure it’s completely submerged. Cover the bowl with plastic wrap and let it sit at room temperature for 6-8 hours, stirring occasionally.
3. Rinse the cabbage in cold water and drain well.
4. In a separate bowl, mix the ginger, garlic, sugar, fish sauce, and shrimp sauce.
5. Add the Red Pepper Flakes, scallions, and carrots to the mixture and stir.
6. Add the cabbage and mix well, making sure it’s coated evenly.
7. Transfer the mixture into an airtight jar, pressing down firmly to remove any air pockets.
8. Let the kimchi ferment at room temperature for 1-5 days depending on how tangy you like it. Once it’s ready, store it in the refrigerator and it can be enjoyed for up to 6 months!
