Next, in a separate bowl, mix together the grated ginger, minced garlic, sugar, fish sauce, and Korean red pepper flakes. Add in the sliced scallions and mix well.

Once the cabbage has wilted, rinse it thoroughly with water and drain any excess liquid. Add the cabbage to the spice mixture and mix until well combined.

Now it’s time to assemble the dish! In a large glass jar or container, layer the cabbage mixture and press down firmly with a spoon or spatula to remove any air pockets. Place a plate or weight on top of the cabbage to keep it submerged in the liquid.

Allow the mixture to ferment at room temperature for at least 48 hours, or until it reaches your desired level of tanginess and flavor. Once the Kimchi is ready, store it in the refrigerator and enjoy as a side dish or topping for your favorite Korean dishes!
