Ingredients:
- 1 Small head of Napa cabbage, roughly chopped
- ¼ cup sea salt
- 1 tablespoon sugar
- 2 cups of water
- 3 tablespoons dried kimchi powder
- 1 tablespoon fresh ginger, minced
- 3 cloves of garlic
- ½ small onion, sliced
- 2 Scallions, finely chopped
- 1 Red chili pepper, finely chopped
- 2 tablespoon of Fish Sauce
Instructions:
- Sprinkle salt over the chopped cabbage and set aside for 1 hour. Rinse and drain.
- Mix water and sugar in a separate bowl until sugar has dissolved.
- Bland the dried kimchi powder, garlic, ginger, onion and chili in a blender to make a smooth paste. Add this to the sugar water mixture, stirring until well combined.
- Mix in the fish sauce.
- Add the scallions and the rinsed and drained cabbage to the mixture and toss until well combined and coated in the mixture.
- Transfer to an airtight container and store at room temperature for 2 to 3 days to ferment. After it’s fermented, store in the refrigerator.
