Chinese Cabbage Kimchi
Ingredients:
- 1 head Chinese cabbage, chopped
- 1 daikon radish, peeled and sliced
- 4 green onions, chopped
- 1/4 cup salt
- 2 tbsp Korean chili flakes
- 1 tbsp sugar
- 2 cloves garlic, minced
- 1 thumb-sized piece of ginger, grated
- 1 tbsp fish sauce
- 1 tbsp soy sauce
Instructions:
- Place the cabbage, radish, and green onions in a large bowl. Sprinkle with salt and mix well. Cover and let sit for 2-3 hours.
- Drain the excess liquid from the bowl and rinse the veggies well. Drain again.
- In a separate bowl, mix together the chili flakes, sugar, garlic, ginger, fish sauce, and soy sauce.
- Add the veggies to the chili mixture and mix well.
- Transfer the kimchi to a jar or other airtight container. Let sit at room temperature for 1-2 days to ferment. Then store in the fridge for up to a month.
