Chinese Cabbage Kimchi

Chinese Cabbage Kimchi

Ingredients:

  • 1 head Chinese cabbage, chopped
  • 1 daikon radish, peeled and sliced
  • 4 green onions, chopped
  • 1/4 cup salt
  • 2 tbsp Korean chili flakes
  • 1 tbsp sugar
  • 2 cloves garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce

Instructions:

  1. Place the cabbage, radish, and green onions in a large bowl. Sprinkle with salt and mix well. Cover and let sit for 2-3 hours.
  2. Drain the excess liquid from the bowl and rinse the veggies well. Drain again.
  3. In a separate bowl, mix together the chili flakes, sugar, garlic, ginger, fish sauce, and soy sauce.
  4. Add the veggies to the chili mixture and mix well.
  5. Transfer the kimchi to a jar or other airtight container. Let sit at room temperature for 1-2 days to ferment. Then store in the fridge for up to a month.
