Korean Daikon Kimchi Recipe

Ingredients:

  • 2 lbs daikon, peeled and diced into small cubes
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons red pepper flakes
  • 2 green onions, chopped
  • 2 tablespoons fish sauce

Instructions:

  1. Place the diced daikon in a large bowl and sprinkle with salt. Toss to combine and let sit for 30 minutes to draw out excess moisture.
  2. Rinse the daikon thoroughly with cold water and drain well.
  3. Add the sugar, garlic, ginger, red pepper flakes, green onions, and fish sauce to the daikon. Mix well to combine.
  4. Transfer the mixture to a jar or container and press down firmly to pack it tightly.
  5. Cover the jar with a lid or plastic wrap and let it sit at room temperature for 2-3 days to ferment. Check daily for any signs of spoilage or mold.
  6. Once the kimchi has fermented to your liking, transfer it to the refrigerator to slow down the fermentation process. Enjoy as a side dish or as a topping for your favorite dishes!
