Ingredients:

  • 1 large head napa cabbage
  • Coarse sea salt
  • 1/2 cup of sweet rice flour
  • 1/4 cup of sugar
  • 1/2 cup of fish sauce
  • 1 medium onion, peeled and chopped
  • 8 garlic cloves, peeled and minced
  • 1-inch piece of ginger root, peeled and minced
  • 1/2 cup of Korean chili powder
  • 4-6 green onions, thinly sliced
  • 1 cup of julienned carrots

Instructions:

  1. First, wash the cabbage and cut it into quarters lengthwise.
  2. Sprinkle coarse sea salt in between each layer of the cabbage. Let it sit for about 2 hours, turning occasionally.
  3. After 2 hours, rinse the cabbage under cold water and drain.
  4. In a saucepan, whisk together sweet rice flour, sugar, and 2 cups of water. Bring to a boil over medium heat, stirring constantly until it thickens.
  5. Remove from heat and let it cool.
  6. In a mixing bowl, combine the fish sauce, onion, garlic, ginger, and Korean chili powder.
  7. Add the cooled sweet rice flour mixture and mix well.
  8. Add the green onions and julienned carrots, and mix well.
  9. Using your hands, rub the marinade mixture in between each layer of the cabbage.
  10. Place the cabbage in a large container, cover and let it sit at room temperature for 1-2 days.
  11. After 1-2 days, transfer to the refrigerator and chill for at least 2 hours before serving.
