Kimchi Recipe
Ingredients:
- 1 head of Napa cabbage, cut into quarters
- 1\/2 cup of coarse salt
- 1\/2 cup of garlic, minced
- 1\/4 cup of ginger, minced
- 1\/4 cup of fish sauce
- 1\/4 cup of Korean red pepper flakes, or to taste
- 1 bunch of green onions, chopped
- 1 daikon radish, julienned
Instructions:
- Take the Napa cabbage, and cut it into quarters. Add 1\/2 cup of coarse salt, and rub it evenly on every leaf.
- Let the cabbage sit for about 2 hours, then rinse it under cold water. Set it aside to drain from excess liquid.
- In a large bowl, mix 1\/2 cup of minced garlic, 1\/4 cup of minced ginger, 1\/4 cup of fish sauce, and 1\/4 cup of Korean red pepper flakes.
- Add the green onions and julienned daikon radish to the mix.
- Take the Napa cabbage, and cover every leaf with the mixture.
- Put the cabbage in a jar, and cover it with the remaining mix.
- Press down on the cabbage to release any trapped air, then let it ferment for about 3-5 days in room temperature.
- After 3-5 days, keep the jar in the refrigerator to stop the fermentation process, and enjoy your homemade kimchi!
Kimchi Braised Whole30 Pork Ribs

- 2 lbs. of pork ribs
