Ingredients:

  4. After 2 days, check the cucumbers for taste. If they are to your liking, store them in the refrigerator. If not, let them sit for another day or two until the flavor develops.

Fermentation Crock - Kimchi Special Edition

Ingredients:

  • 6 garlic cloves (minced)

  • 1 cup of daikon radish (julienned)
  • 1 tsp of fish sauce

Instructions:

  1. Combine the cabbage, chili powder, salt, and sugar in the crock and mix well.
  2. Add the garlic, ginger, scallions, and daikon radish to the crock and mix again.
  3. Press down the mixture until it is covered in liquid.
  4. Add a jar filled with water to the top of the crock to weigh it down.
  5. Close the lid and let it sit at room temperature for 2-3 days.
  6. After 2-3 days, check the kimchi for taste. If it is to your liking, store it in the refrigerator. If not, let it sit for another day or two until the flavor develops.
