Spicy Pinoy-Style Kimchi
Ingredients:
- 1 head of napa cabbage, quartered
- 1/2 cup of sea salt
- 1/4 cup of fish sauce
- 1/4 cup of gochujang (Korean chili paste)
- 1/4 cup of Korean chili flakes
- 1/4 cup of sugar
- 1 bunch of green onions, sliced
- 5 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 1 tbsp of sesame oil
Instructions:
- First, let’s start by salting the cabbage. Rub the salt on each cabbage quarter, making sure to get in between the layers. Let it sit for about 2 hours, then rinse thoroughly and let it drain.
- In a separate mixing bowl, combine the fish sauce, gochujang, chili flakes, sugar, green onions, garlic, ginger, and sesame oil. Mix it all together until it forms a thick paste.
- Squeeze any excess water out of the cabbage quarters and chop them into bite-size pieces. Add the kimchi paste and mix everything together until the cabbage is fully coated.
- Put the mixture into a large airtight jar and let it sit at room temperature for about 24-48 hours before transferring it to the refrigerator. The longer you let it ferment, the more the flavors will develop.

Filipino Style Kimchi Fried Rice
Ingredients:
- 4 cups of cooked white rice, chilled
- 1/2 cup of Kimchi
- 2 tbsp of vegetable oil
- 1/2 of an onion, chopped
- 3 cloves of garlic, minced
- 2 tbsp of soy sauce
- 2 tbsp of oyster sauce
- 1 tbsp of sugar
- 1 tsp of sesame oil
- 2 eggs, beaten
- 1/4 cup of chopped green onions (optional)
Instructions:
- Heat the vegetable oil in a large pan or wok over medium heat. Once hot, add the onion and garlic and cook until softened.
- Add the kimchi and cook for 1-2 minutes until heated through.
- Mix the soy sauce, oyster sauce, sugar, and sesame oil in a small bowl.
- Push the kimchi and onion mixture to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until cooked through, then mix everything together.
- Add the chilled rice and sauce mixture to the pan and mix everything together until well combined. Cook for an additional 3-4 minutes, or until the rice is heated through.
- Serve hot, sprinkled with chopped green onions if desired.
