I recently stumbled upon some delicious-looking images of Korean cuisine that I just had to try for myself. As someone who loves using my slow cooker, I was immediately drawn to a recipe for Korean beef that I found online. But before I get into the recipe, let me tell you a little bit about Korean cuisine.
Korean cuisine is known for its bold flavors and use of fermented ingredients, such as kimchi. Kimchi is a staple in Korean cuisine and is made from salted and fermented vegetables, most commonly cabbage. It’s often used as a condiment or side dish and has become increasingly popular in the Western world in recent years.
Now, back to the recipe! I started by browning some beef chuck in a hot skillet and then transferring it to my slow cooker. I added a mixture of soy sauce, brown sugar, sesame oil, garlic, ginger, and red pepper flakes to the slow cooker and gave it a good stir. Then, I let the beef cook low and slow for about 6 hours, until it was tender and flavorful.
To serve, I made sure to have some cooked rice and sliced green onions on hand. I also whipped up a quick cucumber salad to add a refreshing element to the meal.
But wait, there’s more! While browsing the same website, I also stumbled upon a recipe for homemade kimchi. As mentioned earlier, kimchi is a staple in Korean cuisine and I was excited to try making it myself. It’s actually easier than you might think!
I started by salting some chopped cabbage and letting it sit for a few hours to draw out any excess moisture. Then, I made a paste with gochugaru (a Korean chili powder), garlic, ginger, fish sauce, and sugar. I mixed the cabbage with the paste and let it sit at room temperature for a few days to ferment.
The end result was a spicy and tangy batch of homemade kimchi that I was proud to serve alongside my Korean beef. I even had some leftover to enjoy as a snack throughout the week!
