Ingredients:
- 8 oz. fettuccine pasta
- 3 tablespoons butter
- 1 lb. chicken breast, cut into 1-inch pieces
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon lemon zest
Instructions:
- Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a large skillet, melt butter over medium-high heat. Add chicken and season with salt and pepper. Cook until golden brown and cooked through, about 4-5 minutes per side.
- Reduce heat to medium. Add garlic and sauté for 1-2 minutes, or until fragrant.
- Add cream, Parmesan cheese, lemon juice, and lemon zest. Stir until cheese is melted and mixture is smooth.
- Add cooked fettuccine and toss to coat evenly. If the sauce seems too thick, add reserved pasta water one tablespoon at a time until desired consistency is reached.
