Creamy Lemon Chicken Piccata Recipe

– 4 boneless, skinless chicken breasts

– 1/2 cup heavy cream
– 1/4 cup capers, drained and rinsed
– 2 tablespoons chopped fresh parsley

1. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness using a meat mallet. This will ensure that they cook evenly.
2. In a shallow dish, mix the flour with salt and pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
3. Melt the butter in a large skillet over medium-high heat. Add the olive oil and swirl to coat the pan.
4. Add the chicken breasts to the pan and cook until browned on both sides, about 3 minutes per side. Transfer the chicken to a plate and set aside.
5. Add the lemon juice and chicken broth to the pan. Use a wooden spoon to scrape the browned bits from the bottom of the pan.
6. Lower the heat to medium and add the heavy cream and capers. Stir until the sauce is smooth and slightly thickened.
7. Return the chicken to the pan and spoon the sauce over the top. Continue cooking until the chicken is cooked through and the sauce is hot and bubbly, about 5-7 minutes.
8. Remove the pan from the heat and sprinkle with chopped parsley.
