Let’s start off with the star of the dish: the lemon chicken. The recipe suggests that you use boneless chicken thighs, which are both juicier and more flavorful than chicken breast. You will need to season the chicken with salt and pepper, then brown them in a pot. Once the chicken is cooked through, you can remove them from the pot and allow them to cool.
While the chicken cools down, you can start preparing the base of the soup. The base consists of onion, garlic, carrots, and celery, all diced and cooked until tender. Ingredients
- 1 lb boneless skinless chicken thighs

- 3/4 cup uncooked orzo pasta

Instructions
- Season the chicken with salt and black pepper.
- Heat olive oil over medium heat in a large pot or Dutch oven. Add the chicken and cook until golden brown on both sides and cooked through, about 10 minutes. Remove the chicken and let it cool. When cool enough to handle, cut it into bite-sized pieces.
- Add onion, garlic, carrots, and celery into the same pot. Cook until vegetables are tender, about 5 minutes.
