Skillet Lemon Chicken
This dish is a perfect balance of tangy and savory flavors. The lemon juice, garlic, and chicken broth combined with juicy chicken thighs and fresh herbs give this dish the flavor punch it deserves.
Ingredients:
- 4 bone-in, skin-on chicken thighs
- Salt and black pepper
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 3/4 cup chicken broth
- 1/4 cup lemon juice
- 2 tablespoons unsalted butter, cubed
- 1 tablespoon fresh thyme leaves
Instructions:
- Preheat oven to 400°F.
- Season chicken with salt and black pepper.
- In a cast-iron skillet, heat oil over medium-high heat.
- Add chicken, skin-side down, and cook until crispy, about 5 minutes.
- Flip chicken over and continue cooking for an additional 3 minutes.
- Remove chicken from skillet and set aside.
- Add garlic to the same skillet and sauté until fragrant, about 1 minute.
- Pour in chicken broth and lemon juice and bring to a boil.
- Reduce heat to medium-low and add butter, whisking until melted and combined.
- Add thyme leaves and return chicken to the skillet, skin-side up.
- Transfer skillet to the oven and bake for 15-20 minutes or until chicken is cooked through.
- Serve hot, garnished with additional thyme leaves if desired.
Mediterranean Baked Chicken Dinner

Instructions:
- Preheat oven to 400°F.

- In a large baking dish, combine cherry tomatoes, yellow bell pepper, red onion, and garlic. Drizzle with olive oil and toss to coat.

- Remove from oven and sprinkle with kalamata olives and crumbled feta cheese.
