Shrimp Pad Thai Recipe
Ingredients:
- 8 oz. Pad Thai rice noodles
- 1 lb. large shrimp, peeled and deveined
- 2 Tbsp. vegetable oil
- 1/2 red onion, thinly sliced
- 4 cloves garlic, minced
- 1 red chili, seeds removed and finely chopped
- 2 Tbsp. tamarind paste
- 2 Tbsp. fish sauce
- 1 Tbsp. palm sugar or brown sugar
- 1/4 cup chopped roasted peanuts
- 2 Tbsp. chopped fresh cilantro
- 1 lime, cut into wedges
Instructions:
- Soak the noodles in hot water for 10 minutes, then drain and rinse with cold water. Set aside.
- Heat the oil in a large skillet over medium-high heat. Add the onion and fry until golden brown, about 6-8 minutes. Add the garlic and chili and fry for another 1-2 minutes.
- Add the shrimp to the skillet and fry until pink and cooked through, about 3-4 minutes.
- In a small bowl, mix together the tamarind paste, fish sauce, and palm sugar. Pour the sauce over the shrimp and stir to coat.
- Add the noodles to the skillet and toss to combine. Fry for 2-3 minutes, until heated through and well coated in sauce.
- Remove from heat and sprinkle with chopped peanuts and cilantro. Serve with lime wedges on the side.

- 1 Tbsp. sugar
