Okay, so picture this: I’m strolling through the bustling streets of Bangkok, trying to find my way to the best street food vendors. Suddenly, I stumble upon the most heavenly smelling food cart and my mouth starts watering immediately. I order a plate of Pad Thai and oh. my. god. It was like fireworks going off in my mouth. I knew right then and there that I needed to master the art of Pad Thai making.
And after much trial and error, I have finally perfected my recipe. So without further ado, here it is:
Ingredients:
– 8 oz. Pad Thai noodles
– 1/4 cup vegetable oil
– 3 cloves garlic, minced
– 1 red bell pepper, sliced
– 1/2 cup chopped green onions
– 1/4 cup chopped peanuts
– 2 eggs, lightly beaten
– 2 tbsp. fish sauce
– 2 tbsp. rice vinegar
– 1/4 cup brown sugar
– 1/4 tsp. red pepper flakes
– Lime wedges for serving
Directions:
1. Cook noodles according to package instructions. Drain and set aside.
2. In a large skillet, heat oil over medium-high heat. Add garlic and cook until fragrant, about 30 seconds.
3. Add red bell pepper and cook until just softened, about 2-3 minutes.
4. Add green onions and peanuts and cook for another minute.
5. Push the mixture to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through, about 2-3 minutes.
6. Add the cooked noodles to the skillet and toss to combine with the veggies and eggs.
7. In a small bowl, whisk together the fish sauce, rice vinegar, brown sugar, and red pepper flakes. Pour mixture over the noodles and toss to coat everything evenly.
8. Serve with lime wedges and enjoy!
