Ingredients

  • 8 oz. of rice noodles
  • 1 tbsp. of vegetable oil
  • 1 lb. of chicken breast
  • 1 red bell pepper
  • 3 cloves of garlic, minced
  • 1 tbsp. of soy sauce
  • 1 tbsp. of fish sauce
  • 1 tbsp. of brown sugar
  • 2 tbsp. of lime juice
  • 2 eggs
  • 1 cup of bean sprouts
  • 1/3 cup of chopped peanuts
  • 4 green onions

Instructions

  1. Soak the rice noodles in cold water for at least 30 minutes.
  2. Heat the vegetable oil in a pan over medium-high heat. Add the chicken and cook until browned on all sides.
  3. Add the minced garlic and sliced bell pepper and cook for another 2-3 minutes.
  4. Add the soaked rice noodles, and stir-fry for 2 minutes.
  5. Mix together the soy sauce, fish sauce, brown sugar, and lime juice. Add the mixture to the pan and cook for an additional 2 minutes.
  6. Push the noodles and chicken to one side of the pan and crack the eggs on the other side. Scramble the eggs until fully cooked, then mix them in with the noodles and chicken.
  7. Add the bean sprouts and chopped peanuts, and stir everything together.
  8. Garnish with sliced green onions, and serve!
