-1 cup unsweetened coconut milk
-3 tbsp. low FODMAP soy sauce
-3 tbsp. maple syrup
-2 tbsp. lime juice
-1 tsp. ground ginger
-1 tbsp. chili garlic sauce
-1/4 cup natural peanut butter

3. Once boiling, remove from heat and let steam for 20 minutes without uncovering the pot.
4. Fluff the cooked rice with a fork before serving.

– 1/4 cup peanuts, chopped
– lime wedges, for serving
Instructions
1. Cook rice noodles according to package instructions.
2. In a large skillet, heat garlic-infused olive oil over medium heat.
3. Add red pepper, carrots, and green onions and cook until tender.
4. Add rice noodles and sauce to skillet and toss until everything is coated in sauce.
5. Cook until noodles are heated through.
6. Serve hot with cilantro, peanuts, and lime wedges.
