Pad Thai
Ingredients:
- 1 lb dried rice noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small shallot, minced
- 1 small red chili pepper, seeded and chopped
- 1 egg, lightly beaten
- 1 lb medium shrimp, peeled and deveined
- 2 cups bean sprouts
- 3 green onions, thinly sliced
- 1/4 cup roasted peanuts, chopped
- Lime wedges, for serving
Directions:
- Place rice noodles in a large bowl and cover with warm water. Let soak for 10-15 minutes, or until softened.
- Heat oil in a wok or large skillet over medium heat. Add garlic, shallot, and chili pepper and cook for 1-2 minutes, or until fragrant.
- Push garlic mixture to one side of the wok or skillet and add beaten egg to the empty side. Scramble egg until cooked through, then mix it with the garlic mixture.
- Add shrimp and cook for 2-3 minutes, or until pink and cooked through.
- Drain rice noodles and add them to the wok or skillet. Cook for 1-2 minutes, or until heated through.
- Add bean sprouts, green onions, and peanuts. Toss everything together and cook for 1-2 minutes, or until ingredients are well combined and heated through.
- Serve with lime wedges.
Pad Thai with Sauce
Ingredients for the Sauce:
- 1/4 cup packed light brown sugar
- 1/4 cup soy sauce
- 3 tablespoons fresh lime juice
- 2 tablespoons fish sauce
- 1/4 teaspoon cayenne pepper
Directions for the Sauce:
- In a small bowl, whisk together brown sugar, soy sauce, lime juice, fish sauce, and cayenne pepper. Set aside.

- 8 oz pad Thai noodles
- 1 tablespoon vegetable oil
- 1 tablespoon minced garlic
- 1 red bell pepper, thinly sliced
- 1 small carrot, peeled and shredded
- 4 green onions, thinly sliced
- 1/3 cup fresh cilantro, chopped
- 1/4 cup unsalted peanuts, chopped
- Bean sprouts, for serving
- Lime wedges, for serving
Directions for the Pad Thai:
- Cook noodles according to package directions. Drain and set aside.
- Heat oil in a large wok or skillet over high heat.
- Add garlic and cook for 30 seconds, or until fragrant.
- Add bell pepper and carrot and cook for 1-2 minutes, or until vegetables are just tender.
- Stir in noodles and sauce, tossing until well combined.
- Top with green onions, cilantro, and peanuts.
- Serve with bean sprouts and lime wedges on the side.
