– 8 ounces of rice noodles
– 2 tablespoons of oil
– 3 cloves of garlic, minced
– 1 red bell pepper, sliced
– 1 cup of cooked chicken, sliced
– 2 eggs, beaten
– 3 tablespoons of fish sauce
– 2 tablespoons of brown sugar
– 1 tablespoon of white vinegar
– 1 tablespoon of sriracha sauce
– 1/4 cup of chopped peanuts
– 1/4 cup of chopped cilantro
Now that we have all the ingredients, let’s start cooking!
First, soak the rice noodles in warm water for about 10 minutes until they become soft. Drain the water and set aside.
In a wok or a large pan, heat the oil and sauté the garlic for a few seconds. Add the sliced bell pepper and stir-fry for about a minute until they become tender.
Push the vegetables to one side of the wok and add the beaten eggs on the other side. Scramble the eggs until they become firm.
Now, add the cooked chicken and stir-fry for another minute.
Add the fish sauce, brown sugar, white vinegar, and sriracha sauce to the wok. Mix everything together and add the rice noodles.
Stir-fry everything together for about 2-3 minutes until the noodles are fully coated with the sauce.
Turn off the heat and sprinkle the chopped peanuts and cilantro on top.
Voila! Your Pad Thai is ready to be served.
