Shrimp Pad Thai
Ingredients:
- 8 oz. uncooked rice noodles
- 2 tbsp. cooking oil
- 1 lb. medium shrimp, peeled and deveined
- 4 cloves garlic, chopped
- 2 eggs, lightly beaten
- 1/2 cup bean sprouts
- 1/4 cup chopped unsalted peanuts
- 4 scallions, sliced
- 3 tbsp. fish sauce
- 2 tbsp. brown sugar
- 2 tbsp. rice vinegar
- 1 tbsp. soy sauce
- 1/2 tsp. red pepper flakes
Instructions:
- Prepare the rice noodles according to the package instructions. Drain and set aside.
- In a wok or large skillet, heat the cooking oil over medium-high heat. Add the shrimp and stir-fry until pink, about 2-3 minutes. Remove from the pan and set aside.
- In the same pan, add the garlic and stir-fry for about 30 seconds. Add the eggs and scramble until just set, about 1 minute.
- Add the cooked noodles, bean sprouts, peanuts, scallions, fish sauce, brown sugar, rice vinegar, soy sauce, and red pepper flakes. Stir-fry until everything is well combined and heated through, about 3-4 minutes.
- Return the cooked shrimp to the pan and stir-fry for an additional minute or until heated through.
- Transfer to a serving dish and garnish with extra chopped peanuts and scallions.
