Easy Pad Thai Recipe

– 8 ounces thin rice noodles
– 1/4 cup fish sauce
– 1/4 cup tamarind concentrate

– 2 shallots, sliced
– 1 small red bell pepper, sliced
– 2 eggs
– 2 tablespoons sugar
– 1/2 teaspoon paprika
– 1/2 cup chopped peanuts
– 1/4 cup chopped fresh cilantro
Instructions:
1. Soak the rice noodles in hot water for 10 minutes, then drain and set aside.
2. In a small bowl, combine the fish sauce and tamarind concentrate.
3. In a large skillet, heat the vegetable oil over medium-high heat. Add the garlic and shallots and cook until fragrant.
4. Add the red bell pepper and cook for 2-3 minutes. Push the vegetables to the side of the pan.
5. Crack the eggs into the empty space in the pan and scramble until cooked.
6. Add the drained noodles, fish sauce mixture, sugar, and paprika. Stir together until the noodles are coated in the sauce.
7. Add the chopped peanuts and cilantro and stir to combine. Serve hot.
