The first recipe I’m going to share is from foodiecrush and the second one is from BBC Food. Both of them are vegetarian Pad Thai recipes, perfect for anyone who wants to enjoy a meat-free meal that’s packed with flavor.
Foodiecrush Recipe
Start by preparing the following ingredients:
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/2 red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 8 ounces rice noodles
- 1/2 cup vegetable broth
- 2 tablespoons light soy sauce
- 2 tablespoons tamarind paste
- 2 tablespoons brown sugar
- 1/2 cup chopped unsalted peanuts
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh scallions
Heat the oil in a wok over high heat. Add the garlic, onion, and bell pepper and stir-fry for 2 minutes. Add the rice noodles and stir-fry for 1 minute. Add the vegetable broth, soy sauce, tamarind paste, and brown sugar and stir-fry for 2 minutes. Add the peanuts, cilantro, and scallions and stir-fry for another minute.

Next up is the vegetarian Pad Thai recipe from BBC Food. Here’s what you’ll need:
- 200g flat, wide rice noodles
- 2 tbsp groundnut oil

- 1 tbsp tamarind paste
- 1 tbsp soft brown sugar

- 1/4 tsp chilli powder
- 2 eggs, beaten
- 100g beansprouts

Begin by soaking the rice noodles in boiling water for 8 minutes. Drain and rinse them under cold water, then set aside. Heat the oil in a wok over high heat and add the garlic. Stir-fry for 1 minute, then add the noodles. Stir-fry for 2-3 minutes, then push to one side of the wok and add the beaten eggs. Scramble until set, then mix in with the noodles.
Add the soy sauce, tamarind paste, brown sugar, lime juice, and chilli powder to the wok and stir-fry for 1 minute. Add the beansprouts, spring onions, and coriander and stir-fry for another minute. Serve hot.
