– 8 oz. Pad Thai noodles
– 1/2 lb. chicken breast or shrimp
– 3 cloves garlic
– 1/2 cup tofu
– 2 eggs
– 1/4 cup peanuts
– 1/4 cup green onions
– 1/4 cup cilantro
– 2 tbsp. vegetable oil
For the sauce:
– 1/4 cup fish sauce
– 1/4 cup brown sugar
– 2 tbsp. soy sauce
– 2 tbsp. tamarind paste
– 1 tbsp. oyster sauce
– 1 tbsp. chili paste
Once you have all of your ingredients ready, it’s time to get cooking!
Step 1:
Bring a pot of water to a boil and cook your Pad Thai noodles according to the package instructions. Once they’re cooked, drain them and set them aside.
Step 2:
In a large pan or wok, heat up the vegetable oil and add in your minced garlic. Cook for a few seconds until fragrant, being careful not to let it burn.
Step 3:
Add in your chicken or shrimp and cook until it is no longer pink. If you’re using chicken, make sure it is fully cooked before moving on to the next step.
Step 4:
Push the chicken or shrimp to the side of the pan and crack in two eggs. Scramble the eggs until they are fully cooked.
Step 5:
Add in your cooked Pad Thai noodles, tofu, and peanuts. Stir everything together until well combined.
Step 6:
Next, add in your sauce ingredients: fish sauce, brown sugar, soy sauce, tamarind paste, oyster sauce, and chili paste. Stir everything together until the noodles and other ingredients are coated in the sauce.
Step 7:
Add in your green onions and cilantro and stir everything together until well combined.
Step 8:
Transfer the Pad Thai to a serving dish and garnish with additional peanuts and cilantro, if desired.
