Hey y’all, today I wanna share with you one of my all-time favorite desserts: Pecan Pie! This ain’t your regular ole pecan pie either, honey. This recipe has been passed down through generations and is sure to have your taste buds singing praises.
First things first, let me put y’all on to the ingredients. For the crust, you’ll need 1 and 1/4 cups of all-purpose flour, 1/2 teaspoon of salt, 1/2 tablespoon of granulated sugar, 1/2 cup of unsalted butter (cut into small pieces), and 1/4 cup of ice water. For the filling, you’ll need 3 large eggs, 1 cup of light corn syrup, 2 tablespoons of unsalted butter (melted), 1 cup of granulated sugar, 2 teaspoons of vanilla extract, and 1 and 1/2 cups of pecan halves.
Now let’s get to the nitty-gritty. Start by making the crust. In a large bowl, mix together the flour, salt, and sugar. Add the butter and mix with a pastry cutter until the mixture resembles coarse sand. Add the ice water and mix until the dough comes together. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes. Once the dough is chilled, roll it out and place it into a 9-inch pie dish. Trim and crimp the edges. Preheat your oven to 375°F.
Now onto the filling. In a large bowl, whisk together the eggs, corn syrup, melted butter, sugar, and vanilla extract. Stir in the pecans. Pour the filling into the pie crust. Bake for 45-50 minutes until the filling is set and the crust is golden brown. Cool completely before serving.
Now, y’all know I can’t just leave y’all hanging without at least two variations on this bomb recipe. First up, we have chocolate pecan pie. Simply add 1/2 cup of semi-sweet chocolate chips to the filling mixture. Bake as directed for an extra gooey and decadent pie. And secondly, we have bourbon pecan pie. Add 2 tablespoons of bourbon to the filling mixture. This gives a lovely depth of flavor that will have y’all wanting more.
