Pecan pie is one of my all-time favorite desserts. It’s sweet and nutty, with a deliciously flaky crust and a satisfying crunch from the nuts. I recently stumbled upon an easy Karo pecan pie recipe that I knew I had to try.
First things first, preheat your oven to 350 degrees F. While your oven is heating up, make the pie crust or use a store-bought one. Create your pie crust either by mixing the flour, sugar and salt in a bowl, then cutting in butter and shortening until the mixture resembles coarse crumbs. From there, add water and knead gently until the dough comes together. Roll out the crust, place it in a pie dish, and stick it in your refrigerator to chill.
For the filling, you will need the following ingredients:
-1 cup of Karo® Light or Dark Corn Syrup
-3 eggs
-1 cup of sugar
-2 tablespoons of butter, melted
-1 teaspoon of vanilla extract
-1 and 1/2 cups of pecans
In a large bowl, beat the eggs until frothy. Add in the Karo® corn syrup, sugar, melted butter, and vanilla extract. Beat until the ingredients are well combined. Stir in the pecans.
Now it’s time to pour your filling into the pie crust. Remember, it’s important to use room temperature filling and crust for the perfect Karo pecan pie. Place your creation into the oven and let it bake for 50 to 55 minutes, until the filling has set. Don’t forget to place a foil edge around the edge of the crust to prevent overbrowning.
Once your pie is done, take it out of the oven and let it cool completely. Then, slice and serve! It pairs perfectly with a scoop of vanilla ice cream or a dollop of whipped cream.
