I just wanted to share with you a recipe that has been my go-to lately. It’s an avocado pesto that goes perfectly with pasta or veggies, making it a great option for those of us looking for a delicious and healthy meal.
First off, let’s get to the good stuff – the recipe!
Avocado Pesto Recipe
Ingredients:
- 2 ripe avocados, pitted and peeled
- 1 cup fresh basil leaves
- 2 cloves garlic, chopped
- 1/4 cup pine nuts
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
Instructions:
- In a food processor, combine the avocados, basil, garlic, pine nuts, Parmesan cheese, lemon juice, salt, and pepper.
- While the food processor is running, slowly add the olive oil until the pesto is smooth.
- Use immediately or store in an airtight container in the refrigerator for up to 3 days.
Now, I know some of y’all might be thinking – “But avocado is high in fat!” And you’re not wrong. But it’s important to remember that not all fats are created equal. Avocados are a great source of healthy fats that can actually help improve your cholesterol levels and keep you feeling full and satisfied. Plus, they’re packed with nutrients like vitamins C, K, and B6, as well as potassium and fiber.
But let’s be real – the best part of this recipe is how easy it is to customize. Don’t have pine nuts? No problem, swap them out for walnuts or almonds. Don’t like basil? Try using cilantro or parsley instead. And if you’re feeling really adventurous, you can even add some jalapenos or red pepper flakes for a little heat.
Creamy Avocado Pesto Recipe
But wait, there’s more! I also wanted to share another avocado pesto recipe that puts a different twist on the classic version. This one is a creamy avocado pesto, which goes great with pretty much anything – chicken, fish, bread, you name it.
Ingredients:

- Transfer the mixture to a small mixing bowl and stir in the sour cream until fully combined.
- Use immediately or store in an airtight container in the refrigerator for up to 3 days.
