Pesto Recipe Cashew

As soon as I laid my eyes on this Lemon Cashew Pesto and Easy Cashew Basil Pesto recipe, my mouth started watering. I knew I had to try this out for myself. And boy, was it worth it! I added my own little twist to it and believe me, it turned out to be finger-licking good.

First, let me introduce you to my take on Lemon Cashew Pesto. I started by roasting the cashews until they turned slightly golden. The nuttiness mixed with the lemony tang of the pesto was simply divine. Then I blended it all together along with fresh basil, parmesan cheese, garlic, olive oil, salt, and freshly squeezed lemon juice.

Here’s what you’ll need:
– 1 cup cashews
– 2 cups fresh basil leaves
– 1/2 cup freshly grated parmesan cheese
– 3 garlic cloves
– 1/2 cup olive oil
– Salt, to taste
– Juice of 1 lemon

Once you have all the ingredients, preheat your oven to 350 degrees F and roast the cashews for 8-10 minutes until lightly golden. In a blender or food processor, combine the roasted cashews, basil leaves, parmesan cheese, garlic, olive oil, salt, and lemon juice until you get a smooth paste.

For the Easy Cashew Basil Pesto, I added roasted pine nuts (because who doesn’t love pine nuts?), some parsley, and a pinch of red pepper flakes to give it a slight kick.

Now that you’ve made the pesto, it’s time to get creative with it. I usually serve it with pasta, but it also tastes great as a dip or spread on toast or sandwiches. To make a pasta dish, cook your favorite pasta according to package instructions, toss it with the pesto, and add some cherry tomatoes and fresh basil leaves for garnish.
