Creamy Pesto Chicken Recipe
Ingredients:
- 4 Boneless Chicken Breasts
- 1 Tablespoon of Olive Oil
- 3 Cloves of Garlic
- 1/4 Cup of Chicken Broth
- 1/4 Cup of Pesto Sauce
- 1/2 Cup of Heavy Cream
- Salt and Pepper to Taste
Instructions:
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet. Add in chicken breasts and cook for about 6-7 minutes on each side, or until cooked thoroughly.
- Remove chicken from skillet and set it aside.
- Add in garlic and chicken broth to the same skillet. Stir and cook for two minutes.
- Whisk in pesto sauce and heavy cream. Add salt and pepper to taste.
- Let the sauce simmer on medium heat for 2-3 minutes or until it thickens and coats the back of a spoon.
- Add the chicken back into the skillet and let it simmer for an additional 2-3 minutes, or until chicken is heated all the way through.
- Serve warm and enjoy!
20-Minute Pesto Chicken and Vegetables Recipe
Ingredients:
- 4 Boneless Chicken Breasts, pounded to an even thickness
- 1 Red Bell Pepper, sliced
- 1 Zucchini, sliced
- 5-6 Garlic Cloves, sliced
- Salt and Pepper to Taste
- 1/4 Cup of Pesto Sauce
- Juice of 1 Lemon
- Olive Oil
- Parsley for garnish (optional)
Instructions:
- Season chicken with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium heat. Add in chicken and cook for 6-7 minutes on each side, or until it is fully cooked. Remove chicken from skillet and put it on a plate.
- Add more oil to the skillet if needed. Add in sliced bell pepper, sliced zucchini, and sliced garlic cloves. Stir for two minutes.
- Whisk together pesto sauce and lemon juice. Pour mixture into skillet and stir the vegetables until they are coated.
- Add the cooked chicken back into the skillet and let it cook for an additional minute or two so that the sauce becomes infused with the flavors of the chicken and vegetables.
- Sprinkle some parsley on top for garnish and serve warm.
