Pasta is one of those dishes that just never goes out of style. It’s easy to make, delicious to eat and can be prepared in a myriad of ways. One of my personal favourites is a dish called Parsley Pesto Pasta with Peas. It’s a fresh and flavourful dish that is perfect for the spring season.
To make this dish, you will need:
– 500g pasta
– 1 cup fresh parsley leaves, chopped
– 1/2 cup grated parmesan cheese
– 2 cloves garlic, minced
– 1/2 cup olive oil
– 1 cup frozen peas
– Salt and pepper to taste
To get the dish started, begin boiling a large pot of salted water. Once the water is boiling, add the pasta and cook for around 8 minutes or until it is fully cooked. Once the pasta is cooked, drain it and set it aside.
While the pasta is cooking, you can prepare the parsley pesto sauce. Begin by adding the parsley, parmesan cheese, garlic and olive oil to a blender or food processor. Blend the ingredients together until they form a smooth paste. If the pesto is too thick, you can add additional olive oil to thin it out.
The next step is to incorporate the peas into the dish. Add the peas to the pot of pasta and cook them for around 2-3 minutes or until they are fully heated through. Once the peas are cooked, drain them and add them to the pasta.
Pour the parsley pesto sauce over the top of the pasta and peas and stir everything together. Season the dish with salt and pepper to taste.
To serve the dish, divide it between bowls and top each portion with additional parmesan cheese. You can also garnish the dish with additional parsley leaves for added flavour and an extra touch of presentation.
