Hey, y’all! Today, I’m sharing a bomb pasta recipe that will have your taste buds dancing with joy. This creamy pesto pasta with roasted courgette (that’s fancy talk for zucchini), peas, and rocket (that’s fancy talk for arugula) is everything you need for a quick and easy dinner.
Creamy Brazil Nut Pesto Pasta
Ingredients:
- 9 oz of pasta
- 1 courgette, sliced
- 1 cup of frozen peas
- 2 cups of rocket
- 1/2 cup of Brazil nuts
- 2 garlic cloves
- 1/4 cup of olive oil
- 1/4 cup of nutritional yeast
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions:
- Preheat your oven to 400F.
- Add your sliced courgette to a baking tray, toss with some olive oil and a pinch of salt, and bake for 20 minutes.
- Cook your pasta according to package instructions, adding the frozen peas to the boiling water during the last few minutes of cooking time. Reserve 1/2 cup of the pasta water.
- In a food processor, add the Brazil nuts, garlic, olive oil, nutritional yeast, salt, and black pepper. Process until everything is combined.
- Add the rocket and pulse until it’s all combined and smooth.
- Drain the pasta and peas and return it to the pot. Add the roasted courgette and the pesto, then stir until everything is coated. If the pasta seems too dry, add some of the reserved pasta water.
- Serve hot and enjoy!

- 1/3 cup of pine nuts

Instructions:
- Cook your pasta according to package instructions. Reserve 1/2 cup of the pasta water.
- In a food processor, add the basil, Parmesan cheese, olive oil, pine nuts, garlic, salt, and black pepper. Process until everything is combined and smooth.
- Drain the pasta, but keep some pasta water aside.
- In a large bowl, add the pasta back with the pesto and stir well. If the pasta seems too dry, add some of the reserved pasta water.
- Serve hot and enjoy!
