Creamy & Smoky Ratatouille
Ingredients:
– 1 large eggplant, sliced
– 2 large zucchini, sliced
– 1 large bell pepper, sliced
– 2 large tomatoes, sliced
– 1 large onion, sliced
– 4 cloves garlic, minced
– 1/2 cup mayonnaise
– 1 tbsp smoked paprika
– 1 tbsp dijon mustard
– Salt and pepper, to taste

2. In a small bowl, whisk together the mayo, smoked paprika, and dijon mustard. Set aside.
