Today we’re sharing our classic ratatouille recipe that is sure to impress your guests or just be a delicious weeknight dinner! This dish is full of fresh vegetables and flavor, and is perfect for those looking for a healthy and hearty meal.

Ingredients:

1 large onion, diced
4 garlic cloves, minced
1 eggplant, peeled and diced
1 zucchini, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
2 cans of diced tomatoes
2 tbsp. of tomato paste
1 tbsp. of dried thyme
1 tbsp. of dried basil
1 tbsp. of dried oregano
Salt and pepper to taste
2 tbsp. of olive oil

Instructions:

Preheat your oven to 375 degrees Fahrenheit.
Heat up your olive oil in a large oven-safe pot over medium-high heat.
Once the oil is hot, add in your onions and garlic and let sauté for approximately 5 minutes, or until the onions are translucent.
Add in the eggplant, zucchini, and bell peppers, and let cook for another 5-7 minutes, or until the vegetables have softened.
Add in your cans of diced tomatoes and tomato paste, as well as your thyme, basil and oregano.
Stir everything together to ensure all the vegetables are coated with the tomato sauce.
Place the pot in your preheated oven and let cook for 45-60 minutes, or until the vegetables are soft and the sauce has thickened.
Remove from the oven and let cool for a few minutes before serving.
