Ratatouille Recipe – An Italian in my Kitchen
As a professional, I must say that this is one of the easiest and most delicious ratatouille recipes I have ever encountered. The picture itself is enough to make my mouth water, but the taste of this dish is even better.
To begin, preheat your oven to 375 F. In a large skillet over medium heat, sauté onions and minced garlic cloves in olive oil until the onions are soft and translucent.
Next, add sliced zucchini and diced eggplant to the skillet and cook until they have softened. Then add diced bell peppers and cook for another five minutes. Finally, add chopped tomatoes (fresh or canned) and fresh thyme leaves. Cook for an additional five minutes.
Transfer the vegetable mixture to a large baking dish and bake for 30-40 minutes, or until the vegetables are tender and lightly browned on top.
While the dish is cooking, prepare your rice or quinoa and set it aside. Once the ratatouille is finished cooking, serve it over the rice or quinoa and enjoy!
This dish is perfect for a light and healthy dinner, and can easily be made vegan or vegetarian by omitting the Parmesan cheese that is often added as a topping. For those who do want cheese, sprinkle some grated Parmesan on top to add some extra flavor.
