Ingredients:

  • 1 large eggplant
  • 2 large zucchinis
  • 3 bell peppers (red, yellow, and green)
  • 2 tomatoes
  • 1 onion
  • 4 cloves of garlic
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tbsp sugar
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F.
  2. Start by slicing the eggplant, zucchinis, and bell peppers into thin rounds. Dice the tomatoes, onion, and garlic.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until translucent.
  4. Add the tomato paste and mix well. Add the tomatoes and continue to cook until they break down and become saucy.
  5. Add the sliced vegetables to the skillet and stir gently to combine.
  6. Sprinkle the sugar, salt, and pepper over the vegetable mixture. Stir gently to distribute the spices.
  7. Transfer the skillet to the oven and bake for 30-40 minutes until the vegetables are tender and slightly caramelized.
  8. To make the béchamel sauce, heat 2 tbsp of butter over medium heat in a small saucepan. Add 2 tbsp of flour and whisk until smooth. Slowly add 2 cups of milk, whisking constantly, until the mixture becomes thick and bubbly. Remove from heat and season with salt, pepper, and nutmeg to taste.
  9. When the ratatouille is done, drizzle the béchamel sauce over the top and serve hot!
