Ratatouille Recipe
Ingredients:
- 1 large eggplant, peeled and sliced into rounds
- 2 medium zucchini, sliced into rounds
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 1 large onion, sliced into rings
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
Instructions:
- Preheat oven to 375°F.
- In a large bowl, combine eggplant, zucchini, red bell pepper, yellow bell pepper, onion, and garlic. Add crushed tomatoes, oregano, basil, salt, black pepper, and olive oil. Toss well to coat.
- Transfer mixture to a 9×13 inch baking dish. Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes, until vegetables are tender and sauce is bubbly.
- Serve hot and enjoy!
Gluten-Free Ratatouille Recipe
