Ratatouille Recipe
Ingredients:
- 1 eggplant, diced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 tsp dried basil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, sauté the onion and garlic until fragrant.
- Add the eggplant, zucchini, yellow squash, and red bell pepper. Sauté until they start to soften.
- Add the diced tomatoes, basil, salt, and pepper. Stir well.
- Transfer the mixture to a baking dish and bake for 30-35 minutes.
- Enjoy your delicious ratatouille hot out of the oven!
