Traditional Ratatouille Recipe

Traditional Ratatouille Recipe

Ingredients

  • 1 diced onion
  • 2 minced garlic cloves
  • 2 diced bell peppers
  • 2 diced zucchinis
  • 1 eggplant
  • 2 diced tomatoes
  • 1 tsp. dried basil
  • 1 tsp. dried rosemary
  • 1 tsp. dried thyme
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 3 tbsp. olive oil

Instructions

  1. Preheat the oven at 375°F.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onion and garlic cloves and cook for about 2-3 minutes.
  4. Add bell peppers, diced zucchinis, and eggplant, and cook for additional 2-3 minutes.
  5. Add diced tomatoes, dried basil, dried thyme, dried rosemary, salt, and black pepper to the skillet and cook for 5 minutes.
  6. Transfer the mixture to an oven-safe baking dish and bake for 25 minutes.
  7. Remove from heat and serve hot.

  2. Heat olive oil in a large skillet over medium heat.
  3. Add onion and garlic and cook until softened, about 5 minutes.
  4. Add the eggplant and cook for another 5-7 minutes until it is golden brown.
  5. Add the zucchini, yellow squash, red pepper, and yellow pepper, and cook for another 5 minutes.
  6. Add the can of crushed tomatoes, dried thyme, smoked paprika, salt, and black pepper, and bring the mixture to a simmer.
  7. Transfer the mixture to an oven-safe baking dish and bake for 20-25 minutes, until the vegetables are tender and the sauce is bubbly.
  8. Remove the dish from the oven and let it cool slightly before serving.
