– 1 yellow squash
– 1 red bell pepper
– 1 yellow bell pepper
– 1 onion
– 3 cloves of garlic
– 1 can of diced tomatoes
– 1 tablespoon of tomato paste
– 1 teaspoon of dried basil
– 1 teaspoon of dried oregano
– Salt and pepper to taste
– Olive oil
Now that you’ve got all your ingredients, it’s time to get cooking. Start by preheating your oven to 375 degrees Fahrenheit. While the oven is heating up, slice your eggplant, zucchini, and yellow squash into 1/4 inch rounds. Slice the red and yellow bell peppers into thin strips. Finely chop your onion and garlic.

Transfer the skillet to the oven and bake for 45-60 minutes, or until all the vegetables are tender and the sauce has thickened. Serve hot with some crusty bread or over some rice.
